Marinated Greek Salad

This is a favorite salad recipe from my mother-in-law...SO yumm-o.  The original recipe calls for a cup of olive oil but I feel that that's too much.  A 1/2 cup or even a 1/4 cup is enough and saves on calories.



Marianted Greek Salad
Ingredients:
  • 2-3 plum tomatoes, chopped
  • 1 English cucumber, chopped
  • 1 red onion, chopped
  • 1 green bell pepper, chopped
  • 1 red or yellow bell pepper, chopped
  • 1 small jar capers, drained
  • 1 small can sliced black olives, drained
  • 1/2 lb. crumbled feta cheese
  • 2 or 3 small dill pickles, chopped
  • 1/2 c. olive oil
  • 2-3 Tbl. lemon juice
  • 2-4 tsp. dried oregano
  • 3 tsp. minced garlic
  • 1 tsp. dried basil
  • 2 Tbl. red wine vinegar
  • salt and pepper, to taste
You can add or subtract veggies according to taste.  Just mix and enjoy!

Butternut Squash and Kale Quesadillas

I'm working on the ingredients for tonight's dinner, Butternut Squash and Kale Quesadillas, yum-o!! Also working on a side dish of Corn, Avocado, and Tomato Salad.
